easy + cozy fall recipes.

We had friends over for dinner last night and I made this chicken & rice casserole that’s been a cozy staple in my family forever.

I also made sure to have this candycorn + peanut mix handy. If you haven’t tried it. RUN to the grocery and mix those babies together. It’s truly the perfect mix for Fall! A couple people have told me to add in M&Ms. I’m sure it wouldn’t be a bad idea.

Below I’m sharing 3 very easy + cozy recipes for the Fall. I am by no means a great cook – I’m definitely still learning & have had many fails {and meltdowns} so I PROMISE these are so easy & delicious. You will trick people into think you know what you are doing 😉

Chicken & Wild Rice Casserole.

Ingredients:
1 roasted chicken {I usually shred a rotisserie chicken from the grocery but you can also poach your own chicken breast}
1 box Original Uncle Ben’s Wild Rice
1 can Cream of Chicken or Cream of Mushroom soup {either work!}
1 cup fat free half & half {the original calls for whipping cream but I don’t think you can taste the difference & you save a lot of cals}
parmesan cheese on top {as much as you want}
roasted mushrooms {roast in olive oil & garlic to put on top} – LOVE it this way but some people don’t love mushrooms

Cook rice, place at the bottom of casserole dish. Whisk together 1 cup half/half & cream of chicken or mushroom soup with 1/4 cup water.

Place chicken on top of rice. Put soup mix over chicken. Add roasted mushrooms on top if desired. Bake uncovered at 350 for 45 minutes. add parmesan for the last 15 minutes. serve with salad + side veggie of choice!

The second one is white chicken chili. My sister used this at her work’s chili cook off and ALMOST won. It’s a true winner – guys especially tend to LOVE this chili.

Ingredients:
8 oz block Monterey Jack cheese, 8 oz block Monterey Jack with peppers (or shredded)
2 cans {undrained} Great Northern beans
2 regular sized jars of salsa {I use 1 medium, 1 mild & typically use Chi Chi’s salsa}
*cooked chicken breast
1 can of water
*The amount of chicken you use can vary depending on how chicken-y you want it. Again, I typically use the chicken from a rotisserie chicken.

Break up the cheese into small chunks {by hand or knife} unless you get shredded, cut or rip the chicken into pieces of your desired size and mix everything else together. Slow cook this all day on low in a crock pot or all day in the oven on 200 F. Serve with tortilla chips.

And finally tuna casserole. This one is my absolute fav {but Richard would probably opt for the other 2 before this one}

Ingredients:
8 oz large Shell noodles
1 can cream of mushroom soup
1/2 cup light mayo
1/4 cup white cooking wine
1 large can {12 oz} tuna in water
1 cup shredded Swiss cheese
French’s French fried onions – you don’t have to add these but I love ’em

Cook noodles according to package, in a separate bowl mix together everything else {minus the onion things} then mix in with the noodles. Bake at 350 for 45 minutes – add the fried onions for last 15-20 minutes. serve with peas + cinnamon apple sauce 🙂
