This weekend was low key in the best way. Traveling for work the past two weeks I was really ready to have a chill weekend.

Friday we had an amazing dinner at my in laws. My mother in law made this bacon & artichoke dip for an appetizer {she used turkey bacon} and I LOVED it. Recipe below.

Bacon Artichoke Dip

1 can of artichoke
1/2 cup shredded parmesan cheese {& additional for on top}
1/2 cup light mayo
chopped chives to taste
4-5 slices of bacon or turkey bacon {cook separately before mixing everything together}
Bake 20-25 minutes at 350 until lightly browned on top
serve with crackers or sliced bread

Saturday day nails & Saturday night out for lots of wine with a girlfriend.

Sunday was a little me time + grocery shopping + cooking until the Oscars.

I made “Mrs. Ortner’s Casserole” for dinner — our best family friend’s recipe that is SO delicious & perfect for a cozy Sunday night at home. It’s similar to lasagne but I like it much better. Recipe below.

Mrs. Ortner’s Casserole

1.5 to 2 lbs of ground beef depending on how “meaty” you want it {the photo above is an old photo when I made it in Chicago, this time I used more meat as I was feeding lots of men 🙂 }
8 oz bag of wide egg noodles
20 oz can of tomato sauce
1/2 tsp salt
1 tsp garlic powder
2 tbsp sugar
1 small white onion chopped
8 oz sour cream
6 oz light cream cheese
8 oz mild shredded cheddar

Brown the ground beef with the chopped onion, drain. Add tomato sauce, salt, sugar & garlic powder to the meat. Cook on medium/low for 10 minutes until it thickens.

Next, use a food processor or mixer to blend the sour cream & cream cheese together. Cook the noodles and place at bottom of 13 x 9 casserole dish {make sure to rinse noodles with cold water to stop the cooking process}

Layer the sour cream/cream cheese mix on top of the noodles. This gets a little messy so use a spatula. You can’t really do it “wrong” — lastly put the meat on top. Bake at 350 for an hour. Add 8 oz of mild shredded cheddar on top for the last 15 minutes. Serve with bread, salad & good company, of course.
