Weekend recap of my last weekend in Grenada – EVER. Hard to believe my time down here has come to an end after being back & forth from this island for the past two years. Ready to move forward in our journey of Richard becoming a Doctor! Next stop {after Christmas} — New Jersey.

I never thought I would live in New Jersey {or on the East coast for that matter} but life is funny & OH, the places you’ll go! An example might be living in the Caribbean for months at a time {Say, what!!!}

I’m trying to enjoy the ride & take in all the change with a positive attitude. Change can be hard but it’s all about your perspective. Currently living by this quote 🙂

Friday night we had some beers by the pool to celebrate Richard finishing midterms & then went out to dinner with friends at The Beach House. My dress is DVF. I also wore it to our wedding weekend kickoff mermaid party 🙂

Saturday we had a jam packed day. We went to breakfast at Le Papillion & then got day passes to La Luna to enjoy the pool, the view, the beach & the sunshine. La Luna is one of the prettiest & most private {& romantic!} resorts in Grenada.

We played checkers before & after our amazing Italian lunch. The owner of La Luna is from Italy so the food is outstanding {lunch is included if you do the day pass!} It was a dream of a day.

Saturday night we did the “Banana’s Train” with some of my girlfriends & their husbands. It was sort of like a trolley but Grenada style. The only photo worth noting is below. I was pretty pumped up about this beer pong photo. So Artsy, right?

Sunday was pretty lazy until the evening… potluck with friends + Sunday night football. I brought Skyline dip & tuna casserole.

A similar tuna casserole recipe can be found here {I normally use large shells, put the peas on the side & use 1/2 cup of light mayo instead of milk. Also add a splash of white cooking wine if you have it handy} It’s one of my favorite comfort foods.
